In the hotel and restaurant a handful of names have left their mark on the history’s development. The men behind these names have all had one thing in common: they possessed drive and energy which enabled them to create varying reputations for themselves. Whatever their reputation, they can be considered as pioneers of the modern industry on a large scale. Each contribution has been stamped with a personal style concerning their methods and philosophy of operation.

The names which come to mind in the hotel business are: Hitz, Statler, Hilton, Henderson and Wilson in the USA and Forte in Great Britain, Marriot and Howard Johnson are names more specially associated with restaurant business.

 


The period of the 1930 was one of the economic gloom, creating many victims in the USA, among them was the American hotel industry, which was at a very low ebb. In that context one man, Ralph Hitz, had a particular knack for buying up ailing hotels and predicting with a few dollars what would be their sales and revenue. The Hitz empire was short-lived, but during the decade Hitz built up a chain which was quickly to become the biggest in the USA of that era. What made Hitz so successful was his attention to customer service. He was the first hotelier who tried to ensure that first-timer customer remain customers thereafter.(The guests data were recorded for guest history, the customers were sent telegrams, greetings, they were given the same room, etc.). Hitz introduced air-conditioning in the restaurants, entertainment to occupy the guests. He never made a secret of his business publicizing his methods, which included a certain amount of standardization to the industry.

 

 
 

 


The one man who probably introduced the most innovations into the hotel industry was Statler. His hotels were designed for both guests and staff. He had a telephone placed in every room for the first time in hotel industry., his Pennsylvania Staler was the first hotel to offer complete medical service in case of need.

 
 


The first truly international hotelman was C. Hilton. Today the Hilton empire boasts 40 hotel units in 32 US cities plus more than 25 more units operating under the joint name of Statler-Hilton within the Hilton franchise group.

Hilton hotels cater for the average person on the basis that he or she has similar tastes and requirements. Hilton’s way of looking at things resulted in the application of certain standards to furnishings and cost controls. All costs are controlled on a daily, weekly and monthly basis. Each hotel prepares a daily report summarizing revenues and expenses and loss. In spite of standardization Hilton’s hotels produce an individual personality.

 
 

 


The founder of Sheraton Hotel group was not a hotelman like others. He was first and foremost a businessman who saw the hotel business as a real estate venture. Combining organizational and financial skills he bought and sold hotels to accumulate wealth, The principal in running the hotel for Handerson was maxim efficiency to produce maximum earnings. Henderson introduced a guest questionnaire to serve as a management tool.

 
 


The Wilson’s empire of Holiday Inns is twice the size of both Hilton and Sheraton chains. Holiday Inns offer a certain luxury at affordable prices. Where practical, Holiday Inns are equipped with a swimming pool, which in the Wilson’s philosophy helps to break down the social barriers and add to the security the traveler is seeking.

 

 
 

 


From a modest start as operator of a milk bar in the West End of London which sold ice cream and milk, Forte built his business into a conglomeration employing about 60000 people and producing a turnover of about 1.5 billion US dollars. The Forte formula for success was simply He also paid much attention to the individuality of the hotels to find the right location, to select the right people, to be honest, to combine all with hard work. and hotel managers are encouraged to develop a personal image for each hotel.

From a modest start Ritz learned quickly the requirements of high society and earned a reputation for his style. Ritz paid much attention to the atmosphere and décor of the hotel, he established a standard of quality and service which are highly appreciated by the public.
